Enable continuous, per‑subscription performance statistics and catch‑up estimations

The DB2 z/OS source engine only reports discrete, commit‑based metrics, and many source‑side statistics are available only at the capture level (e.g., log‑cache footprint). As a result, operators have no visibility into subscription‑level read rates, pending transaction depth, or catch‑up time during high‑latency periods.
Requested enhancement:
1. Provide continuous, real‑time source metrics (log‑read rate, log‑cache usage) that are emitted every few seconds rather than only on target commits.
2. Propagate capture‑level metrics down to each subscription view so users can see subscription‑scoped source statistics (log‑cache footprint, read‑rate per table).
3. Introduce a Catch‑Up Estimator that calculates projected time‑to‑head‑of‑log based on current ingest rate vs. backlog size and displays it per subscription.
4. Add Transaction‑Level Counters (transactions read, transactions applied, pending transactions) alongside existing DML counts.
5. Ensure these statistics are collected even when the “performance statistics” toggle is off, so engineering can always troubleshoot.
