This is working as desgined. In the task view, we only act on fields that are visible. Once a field is hidden, it becomes irrelevant. When the save button is clicked on the task view, it sends a list of changes back to the server to be saved to the database. This list of changes only includes fields that are visible, since we don't want the user to save changes to fields they cannot see.
The scenario Visa identfied, can likely be addressed with modifications to the calculation conditions, or an additional lightweight calculation (e.g., if field 1 has value X, set field 2 to null).
Expecting field visibility controls (particularly those configured via the task view) to clear field values is the wrong approach- when a field is hidden, it is simply treated as if it were never shown in the task view in the first place; and we wouldn't want to clear the values for fields which are not visible to the current end user!
