Ability to configure Delete Protection and CMK for DynamoDB tables created by Kinesis stage

The Kinesis stage should be able to configure Delete Protection and Customer Managed KMS Key (CMK) for encryption on the DynamoDB tables created by the stage. Right now, you can only configure tags for the tables.

Additional details:
Right now, the Kinesis stage does not allow any configuration for the created DynamoDB tables aside from tags. The ask is that it allow the user to enable/disable delete protection (https://aws.amazon.com/about-aws/whats-new/2023/03/amazon-dynamodb-table-deletion-protection/) and configuration of CMK (https://aws.amazon.com/blogs/database/bring-your-own-encryption-keys-to-amazon-dynamodb/) for the DynamoDB tables created by the Kinesis stage.

As part of this feature, StreamSets should have the capability to choose either customer managed or AWS managed KMS key.
